Purpose - This is a thin, one sided, right handed blade made to produce smooth fillet cuts for use in sashimi and nigiri sushi, which is why the blade is so long and narrow. Pushing the blade into raw fish would compromise the integrity of the muscle grain and negatively affect the final product.
Also good to point out the one sided edge serves a dual purpose of allowing for high level of control in cutting delicate fish, while also being much easier to sharpen and maintain than two sided blades. It is also used to slice the finished rolls into pieces.
