Albacore tuna, also known as shiro maguro (white tuna) by the Japanese, is an extremely versatile fish that is delightful as sashimi, but may also be smoked, grilled, or broiled. Not to be confused with super white tuna (escolar or butterfish), albacore tuna is heart healthy fish that is mild in flavor and less firm than yellowfin tuna. Some chefs prefer to make the meat seem firmer by searing the outside of the entire albacore fillet, and immediately immersing in cold water. This technique tightens the flesh and intensifies the flavor for albacore sushi fans who prefer a more steak-like texture.

Our albacore tuna is sustainably caught using hook and line in the Pacific Ocean, where albacore are abundant. Our albacore is the only sushi grade albacore tuna available on the market that is MSC certified an independent verification of sustainability. Additionally, because shiro maguro is smaller than other tuna, mercury levels are lower than average.

How to Serve Albacore Sushi

Shiro maguro, when prepared as sushi or sashimi, is often paired with Ponzu sauce as the searing process may reduce some natural sweetness of the fish. This light citrus flavored soy sauce helps restore sweet undertones in the albacore tuna. Experiment with many styles of preparation, as this is a versatile fish.
